Don’t sweet the small stuff: Diabetic-friendly dinners

  • Lay out 8 medium chicken breasts
  • Season with salt and pepper
  • Place 100g sundried tomato halves over the chicken
  • Scatter over 200g green beans 
  • Pour over coconut milk
  • Cover in foil
  • Bake for 30 minutes at medium heat
  • Remove foil
  • Bake for 5 more minutes
  • Garnish with fresh baby spinach
